Nordic Fruits And Nuts Loaf

The original Nordic breads are traditionally filled with generous amounts of nuts, seeds and popularly used as sandwich bread. We’ve given this recipe a twist that’s filled with the natural sweetness of honey, fruits and nutty flavour.

INGREDIENTS

Mixed Fruits & NutsQuantity

Saf-instant® Red

PREPARE THE DOUGH

  1. Place all the dough ingredients into the mixer.
  2. Mix for 8 minutes on low speed.
  3. At the end of mixing, add in the fruits and nuts.
  4. Final dough temperature should be approximately 25˚C.
  5. Place the dough into a bowl, cover and let it rest for 5 minutes at room temperature.

SHAPING

  1. Divide the dough into 10 pieces at approximately 350g each.
  2. Place each dough into individual moulds and make sure to even out the surface.
  3. Let the dough rest for approximately 60 minutes at 25˚C.

BAKING

  1. Preheat oven at 250˚C and bake for 60 minutes
  2. Lower the temperature to 200˚C and bake till golden brown.
  3. Set the breads aside to cool before slicing to serve.

 

*For optional ingredients, please do adjust the mixing and proofing time accordingly if they are not included in the bake.
