Orange Cranberry Pistachio Bread

An irresistible combination of cranberry and pistachio giving you a hint of tartness and nutty flavour in every slice. The fruity and nutty bread is also the perfect homemade festive gift or as a dessert at a celebration.

PREPARE THE DOUGH

  1. Mix dry ingredients at low speed for 30 seconds.
  2. Add orange flavour, fresh milk and water and mix for 3 minutes. You can adjust the amount of water depending on the bread of flour you are using.
  3. Add shortening and mix on high speed until dough is fully developed.
  4. Incorporate dried cranberries to the dough at low speed for 30 seconds.

SHAPING

  1. Rest the dough for 5 minutes and scale to desired weight based on your tin size.
  2. Flatten the dough and spread approximately 200g of pistachio butter filling.
  3. Roll the dough up into a log. Gently slice the log lengthwise and lay one piece on top of the other to form an X. Make sure the cut sides are facing up. Do the same to the other size of the X.
  4. Twist log with the filling layers facing up.
  5. Place the log shaped dough into the bread tin.
  6. Proof at 27˚C for approximately 90 minutes or until double in size.

BAKING

  1. Brush with eggwash and bake at 180˚C for 40 minutes or until golden brown.
  2. Remove from oven and cool on a wire rack before serving.
