Sesame Swirl Bun

INGREDIENTS

Overnight Sponge DoughQuantity

Saf-instant® Gold instant dry yeast3g

Bread flour250g
Saf-instant® Gold instant dry yeast11g

Black sesame powder20g

OVERNIGHT SPONGE DOUGH

  1. Place all the ingredients into a bowl and mix well.
  2. Place mixture into chiller for 12 hours at 5˚C.

PREPARE THE DOUGH

  1. Place all the dough ingredients into the stand mixer except for the salt and black sesame powder.
  2. Mix till fairly smooth.
  3. Add salt and continue to knead till its smooth.

SHAPING

  1. Divide the dough equally into 2 pieces at approximately 250g each.
  2. Take one of the dough, add black sesame powder and mix well.
  3. Round both doughs, place them into individual bowls, cover and let it rest till double in size.
  4. Further divide each dough into 2 equal pieces at approximately 125g each.
  5. Flatten each dough, roll them into 18cm length and brush a layer of egg wash.
  6. Coat the plain dough with white sesame and the black sesame dough in black sesame evenly.
  7. Take 1 black sesame dough and 1 white sesame dough and twist them together.
  8. Roll the twisted dough into a circular shape and tug the end underneath the dough.
  9. Place each dough into a circular bread tin, cover and let the dough rest for 30 minutes or till double in size.

BAKING

  1. Pre-heat the oven at 180˚C and bake for 30 minutes.
  2. Remove from oven and cool on a wire rack before serving.
