Choco-Cranberries Pull-Apart Brioche Buns

INGREDIENTS

Saf-instant® Gold instant dry yeast15g
Magimix® Softness5g
Butter500g
Dark chocolate drops200g
Fresh cranberries200g
Pearl sugarAs desired

PREPARE THE DOUGH

  1. Place all the dough ingredients into the mixer except for the butter, chocolate drops and cranberries.
  2. Mix for 4 minutes on low speed and 5 minutes on high speed.
  3. Add in the butter and mix for 5 minutes on low speed and 2 minutes on high speed.
  4. At the end of mixing, add in the chocolate drops and cranberries.
  5. Final dough temperature should be approximately 25˚C.
  6. Place the dough into a bowl, cover and let it rest for 5 minutes at room temperature.

SHAPING

  1. Divide the dough into 28 pieces at approximately 70g each and let it rest for 20 minutes at room temperature.
  2. Shape each dough into a ball and set them in a round pan.
  3. Evenly spaced out, 6 doughs at the side and 1 in the middle.
  4. Let the dough rest for approximately 90 minutes at 30˚C.

BAKING

  1. Sprinkle pearl sugar if desired.
  2. Preheat oven at 180˚C and bake for 20 minutes.
  3. Set the breads aside to cool before serving.
