Truffle Cheese Ciabatta

The bread for any occasion. This aromatic cheesy bread is perfect as a sandwich bread, dipping in hearty soups or enjoyed simply with butter.

Mediterranean flavour flour (German herbs flour mix) 25g
Bread Flour275g
Salt1 tsp
Cheese (any type)1 block

PRE-PREPARATION

Starter

  1. Place the water, bread flour and yeast into a bowl and mix well.
  2. Leave it for 3 hours in room temperature or 12 hours in the chiller.

PREPARE THE DOUGH

  1. Place truffle oil, grapeseed oil, water, starter, sugar and yeast into the mixing bowl and mix.
  2. Add Mediterranean flavour flour, bread flour and salt into the mixture and whip with a paddle till the dough is smooth.
  3. Place the dough into a container and let it rest for approximately 20 minutes.

SHAPING

  1. Grate the cheese into the dough and fold.
  2. Let the dough rest for a 2nd time approximately 20 minutes, grate the cheese into the dough and fold.
  3. Let the dough rest for a 3rd time approximately 20 minutes and fold.
  4. Let the dough rest for a 4th time approximately 20 minutes, divide the dough into 4 and shape into desired shape.

BAKING

  1. Preheat oven at 220˚C and bake the bread for 15 minutes.
  2. Reduce the temperature to 200˚C and bake for another 15 minutes.
  3. After baking, drizzle truffle oil, add grated cheese and parsley on the bread.
  4. Set the breads aside to cool before serving.
