Kaiser Bun

INGREDIENTS

PREPARE THE DOUGH

  1. Place all ingredients in a spiral mixer.
  2. Mix for 3 mins on low speed and 6 mins on high speed.

SHAPING

  1. Divide the dough into 70g each. Cover and let it rest for 10 mins.
  2. Flatten the dough and mould using kaiser cutter.
  3. Place the dough into a container, cover and allow it to proof for 60 – 70 mins at 35°C / 85% RH.

BAKING

  1. Preheat the oven at 210°C and bake for 18 – 20 mins.
  2. Set the buns aside to cool before serving.
