Candied Orange Bread

Light fluffy sweet brioche filled with candied fruits and a light flavour of rum finishes off the taste of this delicious brioche.

Margarine50g
Shortening50g
Rum30g
Candied Orange50g
Candied Fruits50g

Saf-instant® Gold instant dry yeast5g

PREPARE THE DOUGH

  1. Mix all the dry ingredients on low speed for 30 seconds.
  2. Add water, milk and egg and mix for another 3 minutes.
  3. Add shortening and margarine and mix on high speed for 5 minutes.
  4. Add candied fruit and candied orange and mix at low speed until fully incorporated.
  5. Cover and rest the dough for 5 minutes.

SHAPING

  1. Divide the dough equally into approximately 300g each.
  2. Shape each dough to a ring doughnut shape by rolling into a sausage shape and joining both ends.
  3. Proof for 60 minutes at 27˚C or until double in size.
  4. Brush a layer of egg wash and topped with dried orange and pearl sugar.

BAKING

  1. Pre-heat the oven at 180˚C and bake for 40 minutes or until golden brown.
  2. Remove from oven and cool on a wire rack.
  3. Rehydrate dried orange slices in water and place them on the bread.
