PREPARE THE DOUGH

  1. Place all ingredients in a spiral mixer.
  2. Mix for 4 mins on low speed and 6 mins on high speed.
  3. Place dough into a bowl, cover and let it rest for 5 mins at room temperature.

SHAPING

  1. Divide the dough into 45g each. Cover and let it rest for 10 mins.
  2. Gently roll each dough into a ball of similar size.
  3. Place the dough into a container, cover and allow it to proof for 90 – 120 mins at 30°C.

BAKING

  1. Preheat the oven at 210°C and bake for 25 – 30 mins.
  2. Set the buns aside to cool before serving.
